Love Thy Chicken Malaysian Rendang

This is a spicy, semi-dry curry with a fragrant gravy made from lemongrass, fish sauce, and coconut milk. It is designed to be cooked slowly over a couple of hours, allowing the sauce to reduce and the meat to become tender and caramelized. 

For the best experience, serve it with basmati rice and raita on the side. This recipe can also be easily adapted for a slow cooker.
