Lindo Fried Eggplant - 400g

This is a tropical fruit, otherwise known as 'aubergine' which is used in a variety of dishes worldwide. It is a glossy purple colour and can grow beyond 40cm in length. Eggplant can be roasted, grilled or stewed to make tasty dishes such as ratatouille and numerous Indian dishes. It is also great on the barbeque for a summer meal. These fried eggplant slices simply need to be reheated and are quick and easy to use. Eggplant contains good levels of dietary fibre as well as important antioxidants.
