Keto Recipes - Lemon & Herb Chicken Breast with Sauteed Greens

 2 Chicken breasts - 200g raw
  cup olive oil
 1 lemon
 ½ zest of a lemon
 1 garlic clove, peeled & finely chopped
 ¼ cup fresh parsley, finely chopped
 250 g broccolini or broccoli
 250 g green beans
 1 tbsp coconut oil
 2 tsp sea salt
 ½ tsp black pepper
 Extra lemon for serving

Combine olive oil, lemon juice, zest, garlic, parsley and one teaspoon of salt into a large bowl.

Place chicken breast into the bowl and massage the marinade into them. Let this marinate for 30 minutes (or overnight).

After 30 minutes, heat a frypan over medium heat and add the chicken marinade mix into the pan. Cook the chicken all the way through, roughly 7-10 minutes on each side.

In another large fry pan, melt coconut oil over medium heat, add broccoli and green beans, season with salt and pepper, cook for 5-7 minutes until vegetables are tender, but not soft.

Serve one chicken breast on a plate with half the green vegetables and a wedge of lemon. Enjoy immediately!
