Sorghum is now gaining momentum for it’s super food status. Firstly, it’s gluten-free, non GMO and to top it off it’s also massively high in protein and fibre. We think that makes it worth giving it a try!
Bulgur wheat is most commonly found in tabbouleh salad, this makes a delicious quick and easy mid week vegetarian meal. It is an ideal grain to take into the hills as you simply need to boil the jug and let soak for 10 minutes.
Our favourite go to dish is tuna and cannellini bean salad on lettuce cups. Simply add one tin of tuna in olive oil to one can of cannellini beans. Add minced red onion, capers, olive oil, fresh lemon juice, and finely chopped fresh flat-leaf parsley. Great for lunch or dinner
